The 4 Do’s & 4 Don’ts Of Wine Storage

Most people don’t overthink wine storage until a bottle that costs more than it feels reasonable tastes flat … or just completely off. More often than not, something like that was caused by conditions that were easy to control. But in other situations, it’s a bit trickier. Knowing the best temperature to store red wine is a good starting point – but there’s more to it than that as well. And getting the full picture right is what separates wine that improves over time from wine that quietly and sadly deteriorates on your shelf.

Temperature: Get this right first
Wine storage temperature is the single biggest factor that most people underestimate. Red wine storage temperature sits ideally between 12 °C and 18 °C, although it can handle a bit more than that too. But if you get it in about that range, the wine ages pretty evenly, and the processes that develop flavour stay on track.
Much warmer than that consistently, and you’re pushing those processes too fast – the wine flattens and loses complexity, basically. And if cooler than about 10 °C too often, you risk the liquid expanding or the corks getting pushed, and in some situations, the bottle itself can break.
The best temperature to store red and white wine differs slightly:
- Whites generally prefer 8 °C to 12 °C for longer holds
- Reds want a touch more warmth.
Storing both together? Somewhere around 12°C to 13°C is a workable middle ground – but you can get away with a little more and a little less, too.
And if you’re asking what is the best temperature to store red wine when you don’t have a dedicated cellar, a consistently cool interior room away from heat sources gets you further than you’d think. Because it’s consistency that matters more than hitting an exact number. A steady 17 °C, for instance, beats a space that swings between 12 °C and 24 °C across the seasons.
The Do’s of wine storage
Get these ones right and you’re giving every bottle a genuine chance. They’re not complicated, but they’re the difference between wine that rewards patience and wine that lets you down when you finally open it.
1. Store bottles on their side
Any wine with a cork needs to stay horizontal so the cork stays moist. Why? Because a dry cork:
- Shrinks
- Air gets in
- Oxidation does the rest of the nasty work.
2. Keep it dark
UV light breaks wine down over time – did you know that’s why wine bottles are almost always tinted?
A dark cupboard or dedicated storage space away from direct light works well. A sunny bench definitely doesn’t.
3. Mind the humidity
Around 60 to 70 percent relative humidity stops corks from drying out. This matters less for bottles you’re drinking within a few months, but it becomes important the longer you’re holding onto something.
4. Leave it alone
Vibration disturbs sediment and interferes with ageing. Also, don’t store wine next to appliances that run constantly or anywhere it gets regularly moved around.
The don’ts of wine storage
Just as important as what you should do is what you shouldn’t. These are the habits that seem harmless enough but will quietly ruin a decent bottle over time.
1. Don’t use the kitchen for anything long-term
Kitchens shouldn’t be used for wine storage – it’s just that simple.
Why?:
- Cooking heat
- The oven
- The fridge cycling on and off.
It’s fine for a bottle you’re opening this week, of course. But not fine for the wine you’re keeping.
2. Don’t store bottles upright for extended periods
We basically covered this in the Do’s, but it’s well worth a reminder.
Gravity pulls the wine away from the cork, the cork dries out … and from there it’s a slow decline.
3. Don’t store wine somewhere that gets warm in summer
A garage or garden shed might seem convenient, but if temperatures push past 25 °C regularly, the wine is being damaged, whether you can taste it yet or not.
4. Don’t ignore the smell test
Does wine go off? Yes, absolutely!
So when you open a bottle, give it a sniff and think about whether it smells like:
- Vinegar?
- Wet cardboard?
- Just flat or stale or … gross?
Unfortunately, the storage conditions have done their damage. And it won’t improve from there.
What about already-opened bottles?
Once a bottle is open, the clock is ticking. Oxygen is now doing its work, and you’ve got a limited window:
- Reds?: 3 to 5 days sealed with a stopper and kept somewhere cool
- Whites & roses?: 3 to 5 days in the fridge, max
- Sparkling?: 1 to 3 days max with a proper sparkling wine stopper.
A vacuum pump helps slow the process, though – and so does keeping the bottle upright once it’s open to reduce the surface area exposed to air.
When home storage isn’t enough
Most people can store wine reasonably well at home if the conditions are right. But there are situations where it falls short.
